The Best Buttermilk Pancakes with Coconut Syrup, Peaches, and Cream

Some of my favorite recipes contain buttermilk or butter. This is one of those. Never buy prepackaged pancake mix again. This recipe makes the best buttermilk pancakes and the toppings makes them out of this world.


I would love visiting my aunt in the summer when I was a kid because this was the only time I had access to her pancakes. She gave me her recipe years ago when I had my own little kids. As my extended family has grown, I have become THAT aunt to my nieces and nephews and I love it! Whenever we have a family reunion it is a given that I will make pancakes with coconut syrup. In my own home we make them often on Saturdays when the hubs is home and we can all eat breakfast together.



Let's talk about this coconut syrup. This is a recipe from my sister-in-law. It is our absolute favorite. We don't really buy regular syrup anymore either because my kids love the coconut syrup more (which also contains buttermilk AND butter, so you know it's good).

If you eat just the pancakes and syrup, you will LOVE it! However, when it is summer and the peaches are ripe and juicy, they are a MUST topping. They add another dimension to this already delicious dish that will knock your socks off. And, don't forget the whipped cream- either canned or freshly whipped. Put all of these together and you will be in breakfast heaven!


A warm pancake (or two, or three) served with fresh whipped cream, topped with peaches, and drizzled with coconut syrup is all you need. It is DIVINE. I dare you to try it. Go all out while the peaches are in season. You won't regret it. Get the recipe below!

Fresh Homemade Strawberry Ice Cream

One of my favorite summertime treats is homemade ice cream! I love the way it tastes, the texture, the way it melts, and the memories. As a kid we would have gatherings with my extended family once a month at my great aunt's house behind a grove of orange trees in California. I loved being with family while smelling the sweet orange blossoms, and hearing the motors of the ice cream makers with their constant buzz in the background, ready to surprise us with a treat at any moment. As a kid it seemed like it took forever for the ice cream to be done but it was worth it when the adults would finally give us a paper cup filled with mint, lemon, or fresh banana ice cream. It was heaven! 

Now that I am older and we live far away from California and any extended family, I get to create new memories with my own family. This year I made FRESH HOMEMADE STRAWBERRY ICE CREAM and it was delicious! I just might make it again for Date Night. 





Here's my recipe for Fresh Homemade Strawberry Ice Cream:

Ingredients:
4 c. sugar
2 (14.5 oz) cans evaporated milk
1 tsp. salt
3 quarts half & half
1 pint heavy whipping cream
2 Tbsp. vanilla extract
2 pounds of fresh, washed strawberries, hulled and pureed 
3 bags ice
1 qt. rock salt


Directions:

  • In a medium saucepan, combine sugar, evaporated milk, and salt and heat until luke warm. Pour into large (6 qt.) ice cream freezer container. (I have a 4-qt. freezer and this recipe made 2 batches.)
  • Add the half & half, whipping cream, vanilla, and strawberry puree to freezer container.
  • Freeze in ice cream freezer by surrounding the container with ice until it reaches the top of the container. Generously sprinkle rock salt on the ice. As the ice melts, add more ice and salt. I end up using about 3 bags of ice and 1 quart rock salt for a large freezer. The freezer motor will stop when the ice cream is thick and ready.

Tips For Summer Reading With Your Child

Summer is a great time to read with your child. Most libraries offer a summer reading program that encourage children to read while school is out.


Besides the importance of education,  reading can also be an opportunity for you to bond, show your love for your child, and learn about him/her- how they think, what kinds of things they like, etc.


May I offer some tips for reading WITH your child this summer:
  • Pick a comfortable and clean spot to read with your child. Pick a place where distractions are limited. If your child is young, have him/her sit on your lap. If your child is older, sit somewhere where you can put your arm around your child.
  • Use different voices for different characters. This helps distinguish characters and attitudes.
  • Let your child choose the book- unless it is inappropriate. It may be boring to you but they will love reading more if they are interested in the topic. I hated being forced to read certain books in school but I loved reading the books that I got to choose. 
  • Help your child choose a book that is fun and interactive for both of you. Mix it up. Read some pop-up books, hidden object books, touch and feel books, lift-the-flap books, and finger puppet books. 
  • Get your child his/her own library card and let him/her use it often! Take your child to the library!
  • Don't rush through the book. Take time to read. Don't be a "book cheater!" Don't summarize, skip paragraphs, or pages. If you don't have a lot of time, it's okay to tell your child to pick out a shorter story.
  • Ask questions. (i.e. What do you think is going to happen? What would you do? How do you think that made (character) feel? How would that make you feel? What do you think (character) could have done instead? What did you think about this book? Did you like it? What was your favorite part?
  • Explain what new words mean and try to use them in every day life. Reread the book and ask your child what the new word means. This will help to expand your child's vocabulary.
  • If you are thinking about buying your child a gift for his/her birthday or other occasion, think about giving your child a gift card to the bookstore. It will give them an opportunity to choose their own book.
  • Don't underestimate used bookstores. We love the Berenstein Bears books but it adds up when you're forking out $4 for each book. It makes it easier to buy gently used books for one or two bucks instead.
  • Make reading with your child a habit. Start now.

Birdseed Eggs

This post is a little late in the season but I didn't want to forget about it when springtime rolled around again. I think I'm also in denial that summer is over.

I love these birdseed eggs! This summer we took a trip to California and hung some of these up in Grandma's trees. What fun! These particular eggs come from Smith & Hawken. They came 12 in an egg carton.


I wanted to know how one makes these. It is completely made of birdseed. There's nothing in the middle to keep the shape. I did some research and found out that you can make these quite easily.

Here's the recipe from Birds & Blooms:

  • 1/3 cup gelatin
  • 1-1/2 cups water
  • 8 cups birdseed

1. Mix gelatin and water over low heat until the gelatin is melted and clear.

2. Remove from heat and stir in birdseed.

3. Stir until there is no dry seed.

4. Form mixture into egg shapes. Use plastic Easter eggs as a mold to get the egg shape.

5. Refrigerate for two to four hours and dry on baking rack for three days.

DIY: Tea Party Hats

Under this hat is my cute niece. She is having a tea party with her cousins. They made their own hats, with some help from their moms.

Want to make your own hat?
  1. Cut about 3 feet of butcher paper (we used paper that was about 24" wide).
  2. Mold the paper over the child's head.
  3. Wrap some tape around the child's head to keep the shape. This way the hat will fit and stay on.
    4. Roll up the edges of the paper to form the brim of the hat.
    5. Take the hat off and DECORATE! Use feathers, bows, ribbons, sequins, pearls, tissue paper, etc.) We made some tissue paper flowers to go with the whole "paper" idea. Click HERE for a tutorial on how to make easy tissue paper flowers.


MJ had a blast with her cousins. They all looked darling in their little hats. I think we might try a tea party-themed birthday in the spring.

Flower Shop

What did we do with all those paper flowers we made? We "sold," "arranged," and "watered," and "picked" them in our new flower shop. We covered a moving box (for the most part) with wrapping paper, put our flowers in vases, and MJ rang me up at the cash register. We had a great time playing together.

Date Night...at Home: CHEEZ-IT SCRABBLE

CHEEZ-IT SCRABBLE!


Play a game of Scrabble with your spouse tonight! You can take out all the Z's, Q's, and X's and other letters that drive you crazy. Better yet, eat them!

When was the last time you had Cheez-It crackers? I forgot how good these were. YUM!



These are also good for practicing the ABC's, or sight words with your younger children. Set out a bunch of letters and see if your younger children can find a certain letter from the group. Play a game of Scrabble with your older children and work on spelling. Play a game of Hangman and use the crackers to fill in the blanks. Play a word scramble game.

The possibilities are endless!

Tissue Paper Flowers

MJ and I made some paper flowers today. We wanted some silk flowers for our playtime but we decided to make some tissue paper flowers instead.

Here's how you make these super easy paper flowers.

Supplies needed:
Tissue paper (whichever colors you want)
Pipe cleaners (green for traditional flowers or multi-colored for whimsical flowers)

1. Take 3-4 sheets of tissue paper and layer them one on top of the other. (I cut my sheets down quite a bit. Maybe into fourths?) Then fold them back and forth like a paper fan.


2. Gather your fan together so it looks like this:


3. Cut the edges of your tissue paper for the shape of your petals. I rounded the edges on this particular flower.


4. Wrap a pipe cleaner around the middle of your folded paper and then fan out the petals.


5. Starting with the top tissue paper, gently pull the paper up and separate the sheets.


6. After you have pulled up and separated the tissue paper, your flower should look pretty awesome.


Here's a different shape of petal. I was going for a hydrangea-like flower.


Here's the final product.


The previous flowers were all made with 3 sheets of tissue paper. Here's a four-sheeter.


This one started out cute and wish I kept it this way. I pulled up the first sheet and liked keeping the other sheets how they were. It looked like a cute little daisy.


But my curiosity got the best of me and I kept going. Still cute but not as cute.


We made a little bouquet of flowers for our playtime. I will post later what we did with these flowers during playtime. You WILL want to see it.

Pudding Pops!

I crave chocolate, in almost any form, almost everyday. Today is supposed to be a nice warm summer day so I decided we were going to make Pudding Pops! (Are you thinking about Bill Cosby saying "Puddin' Pops" right now? I am!)

These were super easy to make. Three ingredients to yum! This recipe comes from Our Best Bites as you know is one of my favorite recipe blogs and cookbooks. Check out their website for really great pictures. (I'm no photographer.) Their recipe calls for peppermint extract if you want to make them minty. I decided to keep it out.

1- 3/4 c. Half & Half
1 small pkg. sugar-free instant chocolate Jell-O pudding mix
10 Oreo cookies, crushed

Blend Half & Half and pudding mix in blender until smooth. Add crushed Oreos by hand.

Spoon into popsicle molds (or ice cube trays with toothpicks) and freeze!

When they are finished freezing, dip the mold in a little warm water until pops slide out of mold. If you are using an ice cube tray, it's easier to just run a butter knife along the edges and it will pop right out.


Final product. Take my word for it when I say they were so yummers. (I believe that's the technical term to describe these.) The cookie pieces were so fun in it. I give these pudding pops two thumbs up!
