St. Lucia and Swedish Cinnamon Star bread

This morning we celebrated St. Lucia. St. Lucia Day is a Swedish holiday celebrated at Christmastime on December 13th.


St. Lucia was a young Christian girl who secretly brought food to the Christians in Rome who were hiding in the catacombs under the city in order to save themselves from persecution. She wore a crown of candles on her head to light the way and keep her hands free to carry as much as she could. She was sadly killed for her faith in 304 AD.   
Schools and little towns celebrate St. Lucia today in Sweden with a procession with a girl dressed as Lucia, and sing carols. Other children, both boys and girls, dress in white and are part of the procession. 

On December 12th we read Lucia Morning in Sweden and prepare our gingerbread cookies and saffron buns. In the early morning the girls dress up and we surprise Grandma (my 1/2 Swedish mother-in-law) with the cookies and buns. 



This year we decided not to do the saffron buns because my kids don't like them all that much. However, we did research a new Swedish food and ended up making Swedish cinnamon star bread. Swedish star bread is a mid-summer tradition but it looked so good that we gave it a try. And it was! And it was beautiful! We tried THIS recipe and it was a lot easier than I thought. There are a lot of steps but it goes quickly and it's fun. Don't let the lengthiness of the recipe deter you from making it. 


First make the dough and let it rise. Divide the dough into 4 equal pieces and let the dough rest for 15 minutes. After it rests, roll out the dough into 4 thin rounds and topped them with melted butter and sprinkle with sugar and cinnamon. (The recipe says to keep the top layer plain- no butter or sugar/cinnamon. I didn't listen. It also called for egg instead of butter. I like butter.) Stack the 4 rounds on top of each other. Place a 10" plate on top of the dough and cut around the plate to create a nice clean circle.


Place a 2-3" diameter glass, cookie cutter, or lid in the center of the dough. Do not cut through this circle.


Cut the dough in to 4 pieces, then 8 pieces, and then 16. 


This is where it gets fun. Take 2 pieces right next to each other and twist the two outward at the same time, twice. Repeat with the remaining pieces.

 


Pinch the ends together to create a point.


Cover the dough again and let it rise for about 45 min - 1 hour. When it has risen, brush with egg whites and bake.


 Final product! It is nice and soft.


Dust with powdered sugar or you could even try a little glaze. 


This was perfect. It was delicious! It was a hit with everyone. 

We have been enjoying finding out more about our heritage and adopting some of the traditions of our ancestors.

The Best Buttermilk Pancakes with Coconut Syrup, Peaches, and Cream

Some of my favorite recipes contain buttermilk or butter. This is one of those. Never buy prepackaged pancake mix again. This recipe makes the best buttermilk pancakes and the toppings makes them out of this world.


I would love visiting my aunt in the summer when I was a kid because this was the only time I had access to her pancakes. She gave me her recipe years ago when I had my own little kids. As my extended family has grown, I have become THAT aunt to my nieces and nephews and I love it! Whenever we have a family reunion it is a given that I will make pancakes with coconut syrup. In my own home we make them often on Saturdays when the hubs is home and we can all eat breakfast together.



Let's talk about this coconut syrup. This is a recipe from my sister-in-law. It is our absolute favorite. We don't really buy regular syrup anymore either because my kids love the coconut syrup more (which also contains buttermilk AND butter, so you know it's good).

If you eat just the pancakes and syrup, you will LOVE it! However, when it is summer and the peaches are ripe and juicy, they are a MUST topping. They add another dimension to this already delicious dish that will knock your socks off. And, don't forget the whipped cream- either canned or freshly whipped. Put all of these together and you will be in breakfast heaven!


A warm pancake (or two, or three) served with fresh whipped cream, topped with peaches, and drizzled with coconut syrup is all you need. It is DIVINE. I dare you to try it. Go all out while the peaches are in season. You won't regret it. Get the recipe below!

Chalkboard Placemats

I've been wanting to make chalkboard placemats for months now. I finally did it. I decided that I would follow the directions from Sew 4 Home. However, I wanted to have waterproof fabric on the back instead of regular fabric so I grabbed some oil cloth. When it came time to put the placemat together, I couldn't press anything with an iron or use too many pins. I didn't want to melt my fabric and once the fabric is punctured with pins, the hole stays there.


I decided to do this thing a super basic way using bias tape.


What you'll need:




  • Chalkboard cloth (found in the "utility fabric" section of your fabric store)

  • Oil cloth (also a "utility fabric")

  • Bias tape (extra wide, double fold bias tape- 3 yd. Plan on one package per placemat just in case)

  • Jean needle (strong needle to sew your fabrics)

  • Scissors

  • Sewing machine (with jean needle)

What you'll do:


1) Cut one piece of chalkboard fabric and one piece of oil cloth the same size. Cut it to the size you'd like your placemat to be.


2) With wrong sides together, line up your bias tape on one edge of the chalkboard side! This is important! I found that the chalkboard fabric is quite slick and thick and doesn't grab onto the feed dogs well. So, having the oil cloth on the bottom allows for easier and nicer sewing.


3) Sew your bias tape on. See the following tutorial.



I already finished 2 edges. I'm going to show you the top edge. (Pretend this is your first edge.)

Here's where the bias tape comes in. For super clear instructions on using bias tape without swearing, watch this video.





I followed the instructions in the video almost exactly. The only change I made was that I lined up the edge of my bias tape with the edge of my fabric. The woman in the video, Amy, lines up her bias tape a little below the edge of the fabric but, don't do it! You need that space when you're using the thicker fabrics.


So, unfold your bias tape, with the thinner edge up. Sew along that first fold. I tucked in my sides like Amy did too.









Start folding your bias tape over to the other side of the placemat.





Now it should look like this on the reverse side.



Sew the edge down. The chalkboard side will be facing down but since you now have the bias tape on the bottom, the feed dogs will grab onto the bias tape nicely and you won't have problems.



Repeat with the remaining sides.




You're done!





Prep your chalkboard by rubbing the edge of your chalk all over the board. Wipe it clean with a clean cloth. You're ready! You can also use liquid chalk which I'd like to try out sometime. It looks a lot cleaner and brighter.

Donut Hole Topiary Tips

I've been finding some very cute ideas on Pinterest. I LOVE the donut topiary idea. I decided to give the topiary a try for a baby shower brunch. It turned out okay but there are some tips that I'd like to share if you decide to try it out. There are some things I would do differently.

#1: Instead of wrapping your styrofoam cone in wax paper, choose a nice wrapping paper that matches the theme. Then, when people start picking the donuts off there will be a cute cone underneath and not a dumb ol' white cone.

#2 Stick the toothpicks in one at a time and put the donut on right after the pick is in. Stick the toothpicks closer together. You will feel like you are squishing them in but it looks so much better. Donuts are pretty forgiving so adjust the donut if you need to so that there aren't a lot of gaps.

#3: Instead of putting a donut on the very top, put some kind of decoration on the very top. Maybe a cake topper, or some ribbon streamers, or a flower. Also, if there are some little gaps that you don't like, try putting some tiny silk flowers in the gaps.

All-Bran Muffins: An Extra Delicious Version

Back to breakfast! Here's another healthy idea for breakfast (or for a snack). I like bran muffins and I like to make them quickly. Kellogg's has a great recipe for bran muffins using their All-Bran Original cereal. It's pretty good. However, I'm not a fan of the oil in the original recipe and I'd like it to be a little bit tastier. So, I've modified it a little bit.

The following recipe is an adaptation of Kellogg's All-Bran Original cereal muffin recipe.

Ingredients:

1 1/4 c. flour
1/2 c. sugar
1 Tbsp. baking powder
1/4 tsp. salt
2 cups Kellogg's All-Bran Original cereal
1 1/4 c. skim (fat free) milk
1 egg
1/4 c. UNSWEETENED applesauce
chocolate chips (This is where the extra tasty part comes in. It also makes the muffin a little more moist.)

Directions:
  1. Preheat oven to 400 degrees.
  2. Stir together flour, sugar, baking powder, and salt in a medium bowl and set aside.
  3. In a large mixing bowl, combine Kellogg's All-Bran Original cereal and milk. Let stand about 2 minutes or until cereal softens.
  4. Add egg and applesauce to the milk and cereal mixture.
  5. Stir well. Add in flour mixture and mix well. Add chocolate chips to liking.
  6. Portion evenly into 12 muffin pan cups coated with cooking spray. (DO NOT USE CUPCAKE LINERS! The whole muffin will stick to the paper!)
  7. Bake in preheated oven for 20 minutes or until golden brown.


It will look mushy when you mix everything together. It's supposed to look like that.


When they come out of the oven, they will look delicious!



What to do with the leftovers before you eat them all? Put them in a freezer bag and put them in the freezer. They will reheat nicely tomorrow morning. Wrap a frozen muffin in a damp paper towel and reheat it in the microwave. Now you have breakfast for a week or more!

Green Smoothie

One of my New Year's resolutions is to get fit. Part of this resolution is eating more fruits and vegetables. I will be posting some of my favorite "healthy" meals.

For breakfast I have been enjoying my green smoothies: orange juice, banana, baby spinach, strawberries and a little nonfat yogurt.

Bonus points: my girls will drink it (happily)! AND, it looks so pretty in the blender!
